What I Ate Today- April 4

I hope everyone is having a great week so far! For today’s post, I decided to track what I ate today. In the past year, I’ve found these kinds of posts really helpful because I tend to get bored easily with my food and it’s always fun to get ideas from other people who are striving toward healthier lives as well. I’m also just nosy. Whether it’s watching haul videos on Youtube or reading blog posts about vacations, I’m always curious about what other people are buying or doing. I guess that’s why I was a journalism major in college! Because I enjoy these posts so much, I decided to challenge myself to do the same.

So with that, I’ll start off this post with what I had for breakfast this morning. For breakfast, I really try to focus on getting a lot of protein and a good serving of fruit. This morning, I decided on instant oatmeal with peanut butter mixed in. I topped that with about half a cup of blueberries and half a cup of strawberries. I’ve heard mixed things about the real health of peanut butter, but I’ve cut out most of my dairy butter intake, so I let myself have it! I also make sure to get organic peanut butter when I can.

This year, I’ve drastically increased the amount of veggies I eat during the day. However, one of the things I’ve struggled with is getting enough fruits, oddly enough. You’d think that since I love sweets that I’d be more apt to get more fruit in, but that hasn’t been the case for me. Anyway, once I spoke with my food coach and realized that I wasn’t getting the right amount of fruit, I’ve really strived to eat more, especially in the morning. I try to stick with things like berries or apples, but I will occasionally eat bananas as well when I feel like it.

In addition to the oatmeal, I added a cup of vanilla greek yogurt to get more protein in. For a while I was really obsessed with Dannon Light and Fit greek yogurts, since they had delicious flavors like strawberry cheesecake and blueberry tart, but I’ve found myself craving vanilla or plain yogurt more often than not. I mentioned this in an earlier post, but I definitely believe that switching things up, even if it’s just the flavor of your yogurt, can go a long way toward keeping things less boring.

For a mid-morning snack, I went with a light Frigo cheese stick and a cup of strawberries. Since I aim to get at least 80 grams of protein a day, it’s really important for me to try to get the most amount of protein at each meal, including when I have snacks. These cheese sticks have 7 grams of protein, which is perfect for a little pick-me-up.

Again, I’ve made it one of my goals to get more fruit every day, so that’s why I wanted a cup of strawberries for this snack. Because there’s a small hope that warm weather will be coming soon, I have been craving fruit like strawberries because they remind me of summer. Whenever I eat them, I can imagine it’s 80 degrees and sunny. Of course, when I open my eyes it’s back to being dreary winter weather, but a girl can dream right?

For lunch, I picked a veggie burger from Amy’s topped with shredded cheddar cheese and a big salad with spring mix, shredded carrots, and tomatoes! I’m not a vegetarian, but I still love incorporating veggie burgers and other vegetarian options because they tend to be high protein with lower calories. It is really difficult though, at least for me, to find a veggie burger that really tastes good. I love Amy’s, and I was really excited to discover that I love their veggie burgers. Trader Joe’s also makes awesome variations of veggie burgers, but the closest one to me is about an hour and a half away, so I don’t have access to that very often. If anyone has any veggie burger brands that they love, feel free to share them! I love hearing about new food to try.

I ended my lunch with a serving of honey glazed almonds from Emerald. I’ve been trying to cut back on bread lately, so I decided to go with nuts instead of reaching for a slice. Trader Joe’s has a similar product, except with sesame seeds, which I love, so I was happy to find these almonds from Emerald because it’s available at any grocery store. I also think the honey taste helps with any sugar cravings I have. Obviously, plain almonds would probably be better, but I think flavored almonds are a great option for people who would normally be reaching for potato chips. Emerald has tons of other options as well, including choices for salt lovers, so I would recommend them!

For an afternoon snack, I went with a cup of Fage plain greek yogurt, along with some honey. This yogurt has 23 grams of protein in one little cup! For a while I only used Chobani, but I made the switch to Fage a few weeks ago just to try something new. I love the taste! I know some people get turned off by the texture of greek yogurt, but I have always preferred it over regular yogurt. With the tiny bit of honey, it is a perfect snack to keep your energy up.

For dinner, I had two chicken teriyaki drumsticks, another big salad, and half of a slice of italian bread. For lunch and dinner, I tend to stick with leaner meats like chicken and turkey, and this was the perfect thing for dinner tonight. Generally I try to have more variation between my daily veggies, but as you can see, today I was really craving salad! You can’t really see below the heaps of spring mix, but there’s some shredded carrots and red peppers in there as well. I’ve mentioned this before as well, but salads are so simple to put together and make it easy to get your veggies in.

Unfortunately we are completely out of wheat bread at my house, so that’s how I ended up with the italian bread. I think it’s fine to get white bread occasionally, but I try to stick to whole wheat as much as I can. That’s definitely at the top of my list the next time I get out to the grocery store!

Finally, I ended the day with a Yasso frozen greek yogurt bar. I love these bars, because they’re only 100 calories and so delicious! I tend to either eat something like this for dessert or another serving of fruit. As someone who used to often enjoy a big serving of full-fat ice cream as a dessert at night, I think this is a great swap out because it’s lower in calories while also tasting great.
